I asked my wife if she's ever watched porn, but she always changes the subject, and honestly i'm 27 years-old and I still don't know if any of them watch it and if they actually enjoy it. I've watched it with a few in my time but they always act as if it's new to them. Are they just great pretenders or what?

Some do, and some don't. My wife and I enjoy watching together and occasionally she will start watching before I get to bed - always a nice surprise!
Studies show that women will often not consciously enjoy porn but will physically respond to it, whereas men will more often admit to enjoying it and will also physically respond to it. Our society has a tendency to suppress sexuality espcially in females. Often the "message" is that females don't/shouldn't enjoy sex. Am example of this is that it's "winked at" if a boy is sexually active but girls are called sluts, i.e. if they have sex for any other reason than love they are "defective". This social norm is not very healthy and causes many problems down the line.
Interestingly a Chinese zoo was showing their pandas "panda porn" in an effort to help them mate, so it may not be just humans that like it.
Edit: A good example of repressive sexual "norms" is the post below mine. Sex and/or appearing attractive or sexy is not degrading for either sex. Granted a few individuals may have a problem with addiction but that is not the normal case, and most likey can be attributed to other problems.

Never more than a few times. Face it, most of the porn is marketed at men, and very few women are in leading roles in the porn business. For example, two women getting it on is standard for "heterosexual" porn, but two men? My god! That's so gay!
There are also very strict guidelines for women in the videos, and the men tend not to be so hot. In fact, most of the camera time is on the female and the male is incidental except for his member.
What's so exciting about that for women?
Finally, it's all the same in the end. Same ol', same ol'. I have enough males in my life (relatives, people I've dated, friends) so that I caught (IMO) a decent array of porn, and after the initial thrill, was often bored and would frankly rather DO something than watch it.

Women don't admit to things like that. On an elevator the other day I passed a rather noisy volume of gas and asked the lady standing next to me if she ever did that. She looked at me like I was from some other planet, said nothing, and got off the elevator - between floors!

Yes some women watch porn, BUT. Women prefer a different type of stimulation, they want to see genuine involvement, some emotion, relevance....us dudes just want to see the action....

There are as many types of women, who enjoy as wide a variety of stuff as there are men.
So, yah. Problem is, most of the porn is not designed for women's tastes. There are certain scenes and shots I don't like seeing, and same for them.
But there are still a fair number of chicks who find it interesting/hot/ whatever. Just not as many and not as much as guys.

My wife has for decades and I know several other women in happy relationships that enjoy erotic video with their partners.

No, none that I know of.... women know that the "air-brushed bodies" are not authentic. It is degrading to our identity.
For men who get addicted to porn... I say "STOP!" Fools are headstrong and do what they like; wise people take advice.
This addiction will cause you to want more excitement, more debauchery. It will lead you to destructive behavior with women. Your future joy in any permanent relationship will be disappointing to you because of your current pornography. There are groups like AA for people who are trapped in a pornography addiction. Take advantage of this before it's too late for you!
An empty-head thinks mischief is fun, but a mindful person relishes wisdom.

A lot of women don't like it because they feel it's demeaning (some of it can be). It's not that common for women to like it, but some women do like it. I watch it, though.

I don't but my sister loves it!
I have no idea why but she has several DVDs of the stuff and she is single.
BTW she is also bi-polar so she is highly sexual so that may have something to do with it?!!
