It depends on the situation.
I have to watch what I say around appealing women (whether physically, mentally, or both!) because:
(1.) I am married, for ten years;
(2.) I have a very strong libido that I know will get me in hot water if I do not consistently use willpower and self-discipline to keep it in check;
(3.) At work, this could be grounds for sexual harrassment and though I get hit on by women (and a few men) a LOT, I do not respond in kind.
Nevertheless, I tend to be rather appoachable to those I find appealing. Usually a smile, eye contact, a gentle tone of voice and chit-chatting works well (also, they often want to see my in-progress art, which I generally carry around with me at work in a protected binder.)
If it's someone I admire for what they do (artwork, for example) I try to leave intelligent, witty comments on their websites, and refrain completely from doing the "I'm your number one fan, will you draw me something?" kind of thing.
Generally speaking, I admire from a distance---but not too far, not too close :)

Oh yes and if I get rejected well meh I just remember that there is always more fish in the sea.
