Closed on Sunday is correct. It is as if you are saying"This store is closed on Sunday" You would not say "This store is close on Sunday" Because that would have an entirely different meaning.

Are there any proper nouns in your question?

"close on sunday" could mean that close is on top of sunday; a jockey on a horse (with appropriate capitals)!
