You can do so. So many people is doing it over here, esp for the Philipinos people. With visit visa, you have 2 months to stay here and can extend for another month by paying Dhs. 550/- Therefore, if you can find a job, then it means the company will have around 2 months to proceed your resident visa. It is not a risk, as long as you do not exceed the timing that you are allowed to stay. Cos if sth happened and the police questioned you on the street, you are on visit visa which is legal. And if you are working under visit visa while your employer is preparing it for you, then you can inform them so. Dont worry, it is alright! :)

You can apply and find out a job in Dubai. But you cannot start working somewhere in Dubai while you are on visit. it is against the UAE labour law. Once you got a suitable job then your proposed employer will provide a work visa for you.

even though you wont be doing anything illegal technically , there will be several factors against you , the least of which is the weather because temperatures climbs up in those months then in Ramadan it is shorter working hours so things slow down. Then government (& immigration) offices will be off for 3 to 4 days during Eid holiday , I mean what if you visa expires then have you thought about it (obviously airport does not close but that is for people who already got their papers). The other factor is that you are not the only candidate of offer , thousands of people are doing exactly this. Your plan might work better if you wait until November or October, which is generally the start of fiscal year & when they look for new recruit with new projects.
