My doctor told me to start taking my birth control pills on Sunday but I haven't started my period yet. All the papers she gave me says to start it the first Sunday of your period. Who should I listen to? And if I've already started the pack because I thought I should listen to my doctor, should I continue or just wait for my period? (It's my first time taking birth control).

Listen to your doctor.

If you mean you haven't started periods at all-- then no it doesn't matter when you start it, but if you are "menstrual" meaning you do have periods every month or so (regular or not) then that was a little out of the norm for starting. I'm going to assume you are on the young side, so your hormones have most likely not found a normal grove( your hormones fluctuate signaling the different phases of a cycle)
also if thats the case if may not matter when you start.

In either situation dont stop the pill, doing so could cause some spotting, which isnt bad its just because of the drop in hormones. so keep on it and remember it could take your body 3 cycles (3 packs of pills) to get used to them. record on a calendar if you have any breakthrough bleeding, or really bad mood swings/pms. --c

I know with my birth control, she told me to take it the day I started my period. If you do this and plan on having sex, you are immediately protected (not 100%) but none the less protected.

Listen to your doctor. It takes seven days for the pill to be effective.

If your not sexualy active it doesnt matter, but if you are and there is the tinest chance of you becoming or being pregnant, thats why your meant to wait untill you start your period. BUT if you havent had sex and theres no chance of you being pregnant it doesnt matter at all, i checked the same thing with my doctor.

you cant get pregnant if you dont have your period, and you dont need to regulate your period because you dont have it, i dont see why your doctor would even prescribe birth control. if she didnt give you a reason to take them you shouldnt.
if you are sexually active birth control doesnt protect against stds only condoms do.
