We seem to be able to draw meaning from anything if we try hard enough. Why?

we are curious beings, and what we do not know fascinates us, and we draw connections to the things we do know to understand them.
we have a tendency to analyze, to probe into everything, because we hope to find that it adds some measure of meaning into our lives, some answer or even a hint of an answer to the ocean of questions we have inside.
when we have so many questions, and so desperately seek answers, we can end up accepting anything as an answer.
if we were not so full of questions, maybe we could take things as they are, but then, we would never learn anything.

The answer is in the last word in your paragraph. "Why".

"Why" is the greatest invention of all time. By asking "Why" we seek cause based on effect.

We witness effects all around us and ask "Why?".

Hence, by inquiring we seek to turn ourselves into something more profound than what we have achieved so far.

By understanding "Why" things are as they are, we can make changes to our lives, our environs and our culture to improve it.

On the other hand, some people just vegetate in front of a glowing box all day, eating cereals and hoping for a hot meal and some sex.

Such is the state of humanity.

The only thing I've found that mankind cannot transform into something more profound than what it already is is this:

Mankind, itself.

There are two possible interpretations of that answer - try to get them both, if you can. ;-)

Man has made a lot of profitable enterprises and lifetime jobs just based on the strength of deep profoundity.

We are only here to be pushed around by our surroundings.

One tends to make something more profound only to get understanding.

In our human nature we were taught to question our surroundings.

In return our surroundings tell us who we are.

Because it's human nature to question things. And when we're surrounded by the normal and mundane, why not question why it is that way?

the desire to seem more intelligent than we are, similar to asking stupid questions that on the surface seem quite deep but in reality are scarcely deeper than a puddle of ****.
