So, about 2 years ago my boyfriend surprised me with a small bouquet of little origami flowers that he obviously took some time on.
I usually get him gift cards, but some reliable sources tell me he'd like a more personal gift.
Therefore, I'd like to learn some origami and surprise him.

It has also come to my attention that he plans to give me a *ring!* next month. So I'd need to learn by then haha. :)

Keep it simple for the first few times.
In the Netherlands a lot of people make real simple models and arrange them on cards.
That way you can make a nice scene, like a landscape, without using anything but simple models. You can cut out a tree and make origami birds to sit in it, or a blue paper lake with origami boats and ducks.

you could make an oragami ring and decorate the outside, then write on the inside "I DO" then carry it around until he asks you!
