There are 2 main things that meteorologists observe.

The first has been discussed by most of the other answers before me. That being weather observations. Observations are collected in many ways and at different levels above the surface, including from balloon flights, satellite data (not just for cloud, but for many other variables including wind, humidity and temperature), radar, aircraft, ships, weather observer observations, analyzed charts and automatic instruments.

The second thing that Meterologists look at is computer model data. There are many fields that are observed from many different computer models, that all give differing results. Observations are used to help verify how a particular model is going and to distinguish any problems the model may be having in resolving the data.

Changes in weather patterns which includes cloud cover and precipitation from satellites and radars and climate changes.

Not only patterns but they also check the latest satellite pictures, the radar and even like us, the sky.
