5'7" tall is an average height for motocrossers. As long as you feel comfortable on the bike, and are able to handle it, its a good choice.
remember, The greatest motocrosser of all time, Ricky Carmichael is only 5'7" tall too.....

Yes, you need to start with an KX125, it is a little smaller bike in size, besides the 250 has a lot more power than you can handle, the 125 is more agile and quicker to respond that the 250, which has more speed than you can handle for starting out.

as long as you can handle the power the bike will be fine. I have a cr125 that was a little too tall for me at first. I got a lowering linkage kit that lowered the bike 2 inches so i can touch the ground comfortably. You can also lower the bike by adjusting the front suspension, cutting the seat foam.

It really depends on the experience level of the rider.....if you can handle the power i would get the 250
