Mashed Potato is a dance and the bird must be related to the Birdie song which you did silly movements to.

A mashed potato is the singular form of mashed potatoes while the bird is slang for the international mono-digit salute.

Two OLD dances -- the mashed potato is done mostly with your arms and hands (think mashing potatoes!) The bird -- I'm not sure -- but I've heard of it.

It is a cousin of the Hully Gully and the Boogaloo, not to mention the Watusi and the Shag.
I think there was a film about the Shag dance about 10 years ago, it had such immortal lines as "I won't be back home late Mom, I will have a good shag and then be back here in time for Johnny Carson"
An American film I think.
