Tough question...so many come to mind. Assuming you're referring to recievers only, then the one who stands out for pure speed was "Bullet" Bob Hayes, Dallas Cowboys receiver and former Olympic gold-medalist in the 100m dash. His time in the Olympics has since been broken, but "back in the day" he was the fastest man in the world and when he caught the football, no one could catch him. He simply ran away from everybody. Zone defenses were created just for him and the one-on-one defense was adjusted to allow the defender time to react to Hayes' speed and catching ability.

Really is it changed by one player? Both sides of the ball are faster, stronger, bigger, etc. than the prior generation was.
I dont think one player could change the whole game, because if it was that specific player's extraordinary speed that changed anything...the league would've changed back after his retirement.
I dont think one player can do that in a league like the NFL.

With his speed Lawrence Taylor changed the way defense in the NFL is played. His legacy lasts to this day. He changed the way the linebacker position is looked at and attacked.
