Let's see... Recommendations for a nice date...
The Dahlia Lounge on 4th and Virginia is a great restaurant to start off the night. The crowd is usually calm and enjoyable and the food is excellent, serving up Northwest cuisine with all manner of local ingredients combining into some really sumptuous dishes!
Another good restaurant I'd def recommend is O'Asian, located at 5th and Columbia (where Ruth's Chris Steakhouse was before it recently moved). It's an excellent restaurant that has great dim sum and excellent Chinese cuisine at night.
I'll recommend one more restaurant, being the Tamarind Tree, which is located in the International District on 12th and Jackson in the back corner of the Asian Plaza right there. It's an excellent Vietnamese restaurant with great prices, great food (try the Tamarind Tree Rolls to start!), and a really nice atmosphere. Can get pretty busy and loud in there at times!
For nightlife, it will just depend on what you are into for entertainment. For musical shows, there are all sorts of different venues catering to different genres of music. From Jazz Alley (Jazz [duh, but wanted to say]) to the Crocodile Cafe which often has more shows of the "rock nature", just see what shows might be playing if that's what you're interested in.
There's also theatre, which will also just depend on what you are interested in and what might be showing when you are thinking of going on the date.
Comedy seems to be really growing and there seems to be a lot more different comedy shows going on as well.

There are some nice Irish pubs in Seattle. Park your car, go in, have a couple of drinks, then order some food. Have a few more drinks after that, if you like. It's simple & comfy, you only drive to one place!Go to Yahoo, type in Irish pub Seattle & you'll find a good one. Some sites include photos, too.

If you like seafood Anthony's Homeport is great. It can be a little spendy, depending on what you get, but the food is excellent.
