Well, these composers were prolific.

Scarlatti wrote over 500 sonatas for harpsichord -- that is what he is famous for.

Handel -- well, obviously "The Messiah", "Judas Maccabeus",
"The Harmonious Blacksmith", "Water Music", "Royal Fireworks Music"

Bach -- wow, with over a thousand works, it's hard to say --
"Tocatta and Fugue in d minor", the "Brandenburg Concertos", or the Mass in b minor. "Well Tempered Clavier" (books 1 and 2) "The Art of the Fugue", "St. Matthew Passion".
