In terms of chemistry, what distinguishes metals from non metals?

Non-metals are elctron donors; metals are electron receivers. Non metals predominantly produce covalent bonds when bonding with other non-metals, metals produce ionic bonds when bonding with non-metals. Metals don't bond with each other, but form alloys.

non metals are ionisable

metals are not - they lose electrons in other words and become ions, not keep clinging to them like non metals do.
