Believing means accepting by the mind. For accepting, there is no necessity that U should have seen all those things which is also not possible.Testimonials and affirmations of credible persons can be accepted and are accepted .
If the sources of information are without any flaw and when there is a perfect inference ,sources of perfect knowledge and facts are made available on dependable testimonials you can believe without seeing.

No, because human are complex unlike an animal. When a dog is happy it wag it tail, when a dog is angry it will show it teeth. But a human can be smiling at you, saying nice thing to you but can lie at the same time. Can you honestly say that you know what other are thinking in their head? I rather see it before I believe.
