It comes originally from an Angolan word (W Africa) ki-ngombo. It came to the USA with the slave trade and was the name given to the okra plant hibiscus esculentus.

I have no idea what the ZEB stands for. I make an awesome pot of Gumbo myself and will provide you with recipe and directions for it. Gumbo (No ZEB) ;) Ingredients 1 ½ Cups of Celery, Chopped 1 ½ Cups of Bell Pepper, Chopped 1 Medium Onion, I usually use Red, but any is fine 2 Bunches of Green Onion, Chopped 3 tbl. Minced Garlic 2 Quarts of Fresh Okra, Cut into pieces, if none is available, one big bag of frozen will do ¾ of a Big Jar of Roux, I usually use Doggett’s 3 Quarts of Chicken Broth, I like free range, 1 quart is just incase you need extra 1 Jar of Chicken Bouillon Granules 4-6 European Bay Leaves 8 Boneless Skinless Chicken Thighs 2-3 Boneless Skinless Chicken Breasts 1 ½ - 2 lbs of Sausage, I like Kountry Boy Jalepeno Sausage 1 ½ - 2 lbs of Shrimp 1 Package of Crawfish tails Tony Chachere's Original Creole Seasoning or Tony Chachere's More Spice Seasoning Rice to serve with Gumbo Optional Claw Crab Meat Some Whole Jalepenos You’ll need a big pot to do this and 3-6 hours. I use a food processor to chop the celery, bell pepper, and onion to a medium-fine chop to shave off a lot of time. Also if you are allergic to or don’t like seafood, you can omit it and add 2 more chicken breasts, 2 more chicken thighs, and make it 2 ½ lbs of sausage. This is a lot of stuff and can be expensive, I won’t lie, but this yields a huge pot, note the big pot again, of Gumbo that can probably feed 15-18 people. You’ll also need rice, but that is dependent on how much you like with your Gumbo. Instructions Chop all the veggies first. Roughly chop the green onion into small bits. Cut the okra into bite size pieces, roughly 4-7 pieces depending on size. Make sure when chopping the celery to leave as much of the white at the bottom, minus the root, and the leafy parts. Use a food processor to chop the celery, bell pepper, and onion to a medium-fine chop, just make sure the pieces are small and not big, but you don’t want to liquefy them either. Peel and devein the shrimp (can be done while gumbo is cooking). Cut the sausage into ½ in. thick pieces. Cut the chicken into medium bite size pieces, not huge, but not real small either. Ok, now for the hard part. Empty ¾ of the jar of roux into a big pot. Over a medium heat, stir roux continuously, be very careful not to burn the roux, until it darkens and begins to smoke. Continue stirring vigorously 5-15 minutes after it begins to smoke, depending on how dark you prefer the roux. Dump in the all the vegetables and the 3 tbl. of garlic and continue to stir until onion is clear. The hard part is over, and I hope I explained it right, I do all this by visual so a lot is just estimated. Pour in 2 quarts of chicken broth and 2 quarts of water and get the roux and vegetables mixed in well. Cover pot and bring to a boil, stirring every 10 minutes, leaving the fire on medium heat. Once it comes to a boil and in the bouillon and whole bay leaves and taste. If it needs a more salty taste add the Tony’s seasoning. Also if you want gumbo flavored jalepenos add whole, uncut jalepeno here. Now add the chicken and sausage, cover, and bring to a boil again stirring every 15 minutes. Taste again and add seasoning to your liking. Also if you think the gumbo is too thick add a little more chicken broth and/or water until it’s the consistency you like, but keep in mind, Gumbo is supposed to be a little thick. Now turn down the heat to lowest setting, cover, and let simmer for 45 minutes, stirring every 15-20 minutes. Don’t forget rice. Add the seafood, if you chose to use it, and let simmer another 10 minutes or until shrimp are done. Turn off the heat, try to scoop out all the bay leaves, and jalepenos if you added them, and it’s ready. Put some rice into a bowl and pour Gumbo on top of it. Enjoy!!!
