I make my baby food myself and I am having trouble with the applesauce. It seems that every time I make applesauce it comes out different. Sometimes it almost tastes sour. I have never added sugar to any of the batches I made obviously, so I can't understand why some turn out good and some are not so good. I was thinking maybe that it might depend on the brand of apples that I'm using? I know some cooks will only use certain kinds to make pies, but I have no idea why they do that, just something I've heard. I usually buy whatever apples I can find on sale, but I will buy a certain kind if it would make naturally sweet applesauce. Any tips would be appreciated.

Just wanted to mention, when I make it, I peel the apples and then boil them and then put the soft cooked apples in the blender and then freeze whatever I won't use in the next 3 days.

Royal Gala, red delicious, Jonathon are all sweet apples. The Delicious is not the best for cooking but I have tried it and if you are going to vitamise/blend the apple, it won't matter.

Granny smith is what is generally used for pies and cobblers. They tend to be a little more bitter and have to have a lot of sweetener added to them. Red or Golden Delicious apples are best for applesauce. This is what I used when I made it for my son.

You don't have to peel the apples first if you get one of those cone shaped strainers (They are called China Caps) You can use a thick wooden spoon to force the applesauce through the holes and the peel and seeds stay inside.

I don't make my own applesauce but I do use a juicer & make fresh apple juice every now & then. I find Golden Delicious make an excellent juice so I'm sure they'd make a good applesauce also.

use a sweet, soft apple, like a golden delicious. Some apples are not good for sauce, some are great.
