I think it's partially a result of the higher end draft picks getting drafted to AFC teams during the 90s while the NFC was still dominant.
Teams like the Ravens quietly started to build up to that 2000 defensive teams. They also drafted Ray Lewis, Jonathan Ogden, Edwin Mulitalo, Peter Boulware during the 90s. You also had the Steelers just lying in wait always having a good AFC team.
All of a sudden in 1997, Denver knocks the NFC off of it's perch of superbowl dominannce, then repeats in 1998 on Elway's final season. The Titans organization then came up big in 1999 after they accumulated playes like Steve McNair, Derrick Mason, Eddie George, Jevon Kearse. They make the superbowl and loss to Kurt Warner's Rams, but emerge into a powerhouse.
Next season, you get one of the best defenses in the NFL history coming out of Baltimore which was a huge part of their superbowl victory. New England comes along, though I think they get somewhat lucky with the tuck rule, they emerge into a powerhouse. Oh yeah, Indy has some guy named Manning.
San Diego a few years back emerges with some running back named Ladanian Tomlinson. All of these teams where lying in wait, drafting higher than the teams like Dallas, Green Bay in the 90s, and getting some of those key players to build around, and eventually create for better teams than what the NFC would have to offer.
This is what you are getting. Right now, the NFC teams are generally drafting higher AFC teams, and I think eventually the tide could switch back to them, but not until someone over in the NFC can create a complete package with a top-teir defense with a good/top-tier offense to match. Right now the NFC just doesn't have that, it's not all about coaching, I think it has to a lot do with personnel playing

you said it best...... and I t has to have something to do with owner meddling too, I would guess......heck 15 years ago, the NFC was unstoppable......now the AFC...crazy...and I never could figure it out.....unless all those high draft picks from losing keep flaming out, and leaving the teams broke...
