2000 impala keep overheating?

i change the the free thermostat everytime i drive on the freeway for about 10 mins my temp guage keep going up and down hot for a min then it go back normal what could me the problem

intake manifold gasket or head gasket very common on this car

Air in the cooling system---needs to be purged properly. Have a mechanic do it or buy a shop manual like Chilton or Haynes at a parts store for the procedure.
