the best stone was granite but it depended on what was available. sandstone, limestone, marble

The first guy nailed it. Only wealthy kings and religious orders could afford to bring exotic stones from far afield, so literally whatever was lying about was used.

But the second guy was right, too. Granite is very plentiful, so many castles are made of it!

As a castle was built, and as the owner's wealth increased, dressed stones of higher quality might be added to the surface, strictly for cosmetic purposes.

And more expensive stone castles would frequently replace earlier, cheaper and more primitive "motte and bailey" castles (made of timber, mud, and fill-dirt or stone).

Mostly whatever the local stone was.
Romans actually had each soldier in a legion carry a brick with them. When they camped, each soldier took out the brick and they made a fort right where they camped.

Generally granite. It is a hard stone, and quite plentiful.
