Go to the Adirondaks!! There are plenty of mountains. I would suggest going to Lake Placid, where the 1980 winter olympics were held. Whiteface is a huge mountain, among others. We have stayed at the Hilton which is nice but not exactly a resort. It's really a small quaint town, but it's fun for a weekend, especially in the winter.

A good day trip is to visit the historic Mohonk Mountain House resort in the Shawangunk Mountains (near New Paltz).
It's an impressive, sprawling Victorian hotel set beside a pretty lake. You can get a day pass to hike on the trails on the property (which is huge) and some packages include entrance into the hotel and lunch.

The Catskills or the Adirondacks are both in New York. You can take the train to the Catskills.
