The Magna Carta granted people various rights that even the king could not ignore. That was signed in 1215 under King John. However, that document actually largely just reitterated an older document promising many of the same things that was signed by Henry I in 1100.

Henry the VIII th (8th) was the last king to rule an absolute monarchy. During his reign, it was changed. The Magna Carta changed his powers.

Henry VIII was the last, I believe although Elizabeth I involved parliament in government at her choice.
