I don't know, but a few of candidates spring to mind.

Xenopus (a species of frog) oocytes (egg cells) are commonly used in developmental experiments because of their size. These cells are about 1mm in diameter.

Muscle cells and neurons may not be as large volume-wise, but can be very long. Muscle cells can be up to about 30cm (but if memory serves they are not mono-nucleated). Some neurons can be >100cm long.
