I'm talking about René Descartes. Do you say it as if it were a French word?

So, phonetically is it - des-car-tay or des-car-tes

?

Yes, the name is french. All of my French instructors pronounced it Day-care-t. In french the S is silent, the R's are rolled at the back of the throat.

No phonetically it's de-kar-t. You don't pronounce the s after de and the es after t - French pronunciation rules.

Never put Descartes before the horse.

It's neither. The pronounciation is day-car with the 'r' being subtly rolled at the back of the roof of your mouth with the base of your tongue. The roll is almost imperceptible though.
