If your truck has the original radiator It may need acid / flushing and neutralizer / flushing. As radiators age the cooling tube interior walls have a build-up of scale and rust. This severely cuts the efficiency of the exterior cooling fins ability to transfer heat away. It may be necessary to remove the radiator and wash the cooling fins with a garden hose.
When all else fails I'd suggest replacing your radiator with a core which has an added row of cooling tubes. As the other guys have stated check the effectiveness of the thermostatic clutch on the radiator fan hub. When the motor is hot the hub should be fully engaged sucking maximum air through the plastic radiator shroud.
I've seen a couple of guys add a "pusher" electric fan in front of the radiator to aid cooling on Chevy 3/4 and 1 ton trucks used to pull fully enclosed race car trailers. In both cases the added fan dropped coolant temps.

Flush the radiator or install a bigger one, make sure fans are working and the lower air dam below the bumper is ok and not missing or damaged....buy a product called Water Wetter or similiar products....RV owners and racers use it to lower coolant temps by 30 degrees for heavy duty use like going up mountains or pulling a load. Check the trans for overheating also....make want to put in a good cooler for that as well. Install a trans temp gauge to monitor the temps....cheaper than a new trans.
