We need a different date for a train ticket we already purchased. It's for a one way trip in November. I couldn't find this information on their site. How could I go about changing the reservation? Thanks.

You should be able to change on the site where you bought the tickets, search for a button like 'contact' or 'e-mail'.

If it does not work try with the train company you will travel with, read on:
Mostly the tickets that are sold are from a train company, not Rail Europe, and many companies have different rules.
If you have your ticket it may say something like:
Valid for two months, or valid from (date) to (date).
In that case you only need to change reservations if you have made them for a particular date.
Or the ticket can be for one train only, most high-speed trains work that way, in that case you need to contact the high-speed train company you travel on. You will need to exchange the ticket, or mostly to buy new tickets for which the old tickets are accepted as part payment. (You will have to pay the difference in price and will loose a little on the value of the first ticket.)
If your ticket is a combination of both kinds of tickets you will only need to change the parts that are relevant.
Or the ticket is for one particular day, mostly just ticket within one country, or you need to change outside the period when the ticket is valid.

Contact the national train company for the country where you travel, to ask what to do.
As you do not give any information on where you will be traveling I can not give you the contact information.
But you will mostly find it when you google on the name of the country and train information.
