If you read the chronology at the end of The Return of the King, you will find that during the battles in Gondor and in front of the Black Gate of Mordor were going on, the dwarves of the Lonely Mountain were fighting their own battle against Sauron's forces and the elves of Lothlorien were also under attack from Dol Guldor in Mirkwood.
But the main story of The Return of the King is the final passing of the world of the First Age from Middle Earth and the rise of men as the rulers of the world. The implication is that the last of the elves leave early in the Fourth Age, and although the ultimate fate of the dwarves (and hobbits) is not addressed, Tolkien leaves the strong impression that men will inherit the world in the long run.
If you want to learn the background (and just who Elrond and Galadriel really were, and what it was that the elven rings were meant to preserve), you'll really have to read the Silmarillion, which is largely an account of the wars of the First Age.
At that time, elves played the largest role, although there were also great men who were involved later in the wars of Beleriand. The story of Beren and Luthien Tinuviel is particularly worth reading (and is a prefiguration of the marriage of Aragorn and Arwen)

The Lord of The Ring tells the story of the beginning of the age of men. Read the book and there are mentions of the Elves and Dwarves fighting in their own lands. The Return of the King is the battle against Mordor by Gondor.

Stephen K is right. Most of the elves had already abandoned Middle Earth, and most of the dwarves did not consider it their fight to begin with. Remember, Galadriel explained to Frodo that she had overcome the temptation to exploit the ring, and that she was ready to depart for the West. And her people, along with Elrond's clan, were some of the last elves to remain in Middle Earth.
