Anything by Bach. I especially like his fugues, but his 'suites' of keyboard music and his orchestral music are very nice too.

Mozart, of course was also in that century. His last three symphonies are GREAT. Also his piano concertos.

The 18th century is actually two distinct musical 'periods'. Before 1750 you have the baroque era, after 1750 you have the 'classical' period. Bach was baroque and Mozart was classical.

In England, Handel was very good. He was more popular than Bach even though they lived at the same time. He wrote some nice concertos, music for special occasions, like Water Music and Music for the Royal Fireworks, but I think he's best known for his oratorios, like The Messiah.

There were a LOT of composers during this time. Many are considered 'minor' but you might like their stuff. Rameau in France, Vivaldi in Italy, Teleman, Corelli, Scarlatti, etc. etc. You really have to 'listen around' to see what you like. Bach and Mozart are really the best examples, though.

In the early 18th century, you have the music from composers of the late (or "high") Baroque period, such as Vivaldi, Bach and Handel.

In the later part of the 18th century, you have the music from composers of the Classical period, such as Haydn, Mozart and Beethoven.

The Wikipedia pages listed below will give you background information. The Squidoo pages listed below have video samples of the music of some of these composers (as one of the previous replies said, you have to "listen around" a bit).
