Why not oxygen gas? I'm just curious as to why it is carbon dioxide in soda. What makes it better than any other gas for the job?

Carbon dioxide dissolves in water well; many other gasses would just sit on top of the water, not make it fizzy. There aren't too many gasses that will dissolve and are non-toxic. Nitrous oxide is used in whipping cream because it is fat-soluble.

The only carbon dioxide that contributes to global warming is CO2 newly created by burning a fossil fuel or that might be released from an otherwise permanent sink like melting permafrost. CO2 from those sources has not been in the atmosphere for millions of years and so is contributing to the over all increase in CO2 concentration. CO2 released from a soda can comes from a source that would have released it into the atmosphere anyway. It may actually come from the atmosphere in the first place or from captured combustion gases and so it does not contribute to the total increase. However, even if soda can CO2 were a completely new source of CO2 it would be a very small source compared to others. Personal soda consumption might add up to a few pounds of CO2 per year for the biggest soda drinkers; it must be no more than a small fraction of an ounce per can. Driving your car on the other hand results in between 3 and 30 tons of CO2 released each year so cars must be a source several orders of magnitude greater than sodas. Even so every new source of CO2 contributes to the total concentration in the atmosphere and so contributes to global warming.

The reason we use carbon dioxide is its cheaper, safer to store in large quanitites, and carbon dioxide manufactors have a deal with all major soda distrubitors. Back in 1974 Coca Cola and Pepsi went ahead and purchased the Inlet Gas Supplies Company along the Delware River. 78.4% of the gas produced at this facility was CO2 gas so the cola giants stuck to it.

Carbon dioxide is easier and cheaper to produce and package - the bubbles are small, and will remain in solution longer than oxygen.

The solubility of CO2 in water is much higher than any other common (and non-toxic) gas. It takes a lot of gas to make all those bubbles we like to enjoy as we swallow. The CO2 dissolved in the cold liquid comes out of solution rapidly when the liquid is heated by our relatively warm body, thereby producing the desired effect.

easily liquefied and water soluble are
toxic.
(eg.s ; H2S, SO2, NO2, NH3, Cl2)
CO2 itself is an acid anhydride, (look it up),
but of an acid so weak as to be tolerable.
