I'm currently running an XFX Geforce 6800GS and considering an upgrade, what would run faster; 2 XFX8600GT XXX cards in SLI or a single XFX8800GTS card?

Definitely single 8800GTS - remember you're talking pairing a couple of barely midrange cards in the 8600 series, vs a high-performance card in the 8800 series.

Better all-around performance, less power consumption, less heat and you preserve the SLI option for later, if you get a tax refund :)

Single 8800 GTS.

SLI'ing cards doesn't double performance. In real world applications, it's more around 60% performance increase vs a single card. Sometimes, depending on how well optimised an application is, SLI can actually give a performance decrease!
Also, extra heat from two cards isn't worth it.
