Because often less really is more. Quality over rides quantity. If you look at any aspect of life; less is usually more.
In the environment; less greed/buying encourages more appreciation of those things you really do want and value in your life. It encourages more wild spaces, more fauna, more flora.
In monetary terms: the more you have, the more you need. The desire to purchase items grows. However, the desired purchases grow much less important to you. Have less value to you, people have whole wardrobes full of still labeled clothes.
Workaholics because of their pursuit of money frequently have many regrets in their old age/deathbeds. Money can not be taken with you. Any item you purchase is lost in illness and death.
Love chocolate? Eat lots of it, you will never taste it. Limit yourself to a few squares it becomes exquisite. Less is more.
The final analogy, you are on a cruise ship every night there is a banquet with over 50 different dishes. On the first night one person tries a little bit of 25 of the dishes. Another person tries two dishes. On the second night the first person tries the other 25 dishes. The second person again tries two dishes. This continues for the two week stay. At the end of their holiday when asked about the variety of dishes:
The second person says, 'Absolutely amazing, so much choice, I would love to stay and try some of the other dishes'
The first person says, 'Terrible, after the first two days, the menu was just the same. I was so bored with it.'

I think the entire word "settle" in this particular sentence implies the less. If one gets "more" then they are not really settling.

i would think most who settle would settle for the most they feel they can get, at the time
also, sometimes what seems settling is really adjusting your priorities, and changing your mind as to what you want for that moment in time,

So that you can actually settle; to get more is to search for more, for less is to look inwards. By gaining more, you risk what you have. The samurai is proud in the face of hunger. However. I'm not a samurai.

My words exactly Why are we here life after life settling for a material body and being separated from our eternal relationship with God.(also known as Krishna, Jehovah, Allah, Vishnu, etc.) Of course we can love Him here, but we can be directly with Him if we choose to. We just have to give up all of our attachments to this illusory energy of His and surrender to Him or His pure representative like Jesus (Yesuah) or Bhaktivedanta Prabhupada, Then at the end of life we will go directly to Him. Oh when will that day be mine? (Die to live- eternal life) But I must be patient the time will surly come.

It would depend upon the cost one is willing to pay to continue to strive for more and whether the price is worth the pay-off.
It would also depend upon one's health, finances, and even fate itself as to whether or not one will settle for less than originally hoped to attain.
