Which of these phrases is more correct, or is it a matter of personal preference?

Very little, if any difference.

Still, if I were writing the documentation, I would write it as "After the setup screen appears..."

To me this conveys the sequence of events better. There is a small possibility of someone misinterpreting "Once" to mean that something might happen only one time, whereas with "After" it is clear that the setup screen is supposed to appear and then you are supposed to select the options tab, no matter what.

Really I'm just quibbling, but that's how I would do it

Just like in any language, you can say it several ways but they mean the same. It is your preference. Hope my english is fine.

Both have the same meaning, just preference.

They're both fine. The first gives the impression of that it be done immediately.
