I bought a brick and was unable to break it in half, I tried stepping on it and cutting and I didn't have a knife sharp enough,(butter Knife).

I was wondering is it okay to freeze the rest of it and use it, and defrost it when I need it again?, Because I don't want to waste it.

Soak the whole brick, use what you want, then wring out and store the rest to use later.

I just air dry mine on an old sheet and resoak it when I need it. Sometimes I'll get lucky and be able to break off about 1/2 a brick while it is soaking and save it for later.

About the only way to cut a brick would be to use a good saw.

Aren't you supposed to soak that stuff in water? If it is I do it in a 5 gallon bucket and use what I need to and cap it back up. Just moisten it every couple of days and ventilate so water can escape to prevent mold.
