Early man didn't often get the opportunity to eat their fill, so those that consumed more calories per opportunity tended to survive and reproduce. Therefore, it was then vitally important to desire fats and sugars.
It has been relatively a "blink of an eye", compared to man's time on earth, that we have had ample opportunity to eat our fill. This sudden development has not given us time to evolve out of this desire.
The old conditions still hold true in third world countries. Starvation makes you skinny because you have already absorbed your body fat and your body has then begun to absorb your muscle tissue. Your body needs a certain amount of fat to maintain healthy muscle tissue.
If you gave a starving person a carefully monitored high-fat high-sugars diet, that would prevent muscle loss and restore electrolyte balances. Once muscle loss is stopped, they'll need a more fat-balanced diet that is high in essential minerals and tissue-building materials.

I don't personally agree with you about which tastes better, but to answer the question; you will note that the difference in the examples you give is fat. Back in the day, when food could be scarce at times, man developed a preference for higher fat foods because they give more calories per ounce. This preference stays with us to this day.
However, if you make a habit of avoiding fat, after a while you will find that the fattier food isn't as appealing-for instance I would prefer a veggie burger, could enjoy the chicken either way, and prefer a squeeze of lemon juice on my veggies.

Humans did not evolve to eat healthy, despite what health food nuts will have us believe. We were meant to eat foods high in fat and sugar so that our body can store it, and we differentiated these foods as they tend to taste better. However, the humans of the past did move about more, and they needed the extra energy. In today's world, these 'good' foods just end up being the reason for the health problems we're riddled with today.

A lot of this is because there are certain food components that are important for us to survive, and that would normally have been quite rare for humans to get a good source of: salt, sugar, and fat.

When humans were hunter-gatherers, it would have been important for us to try and get as much of these foods as possible, so we have evolved to really, really like the taste of them.

However, we no longer have a shortage of those types of nutrition. We still love the taste of them, but now this is a problem, because it leads to us comsuming unhealthy amounts of those food types.

Because the fried, nasty foods are designed to taste good by adding sugar, artificial preservatives, sodium, and all that other bad unhealthy junk. The healthier foods just taste natural. i.e. fruits, vegetables, whole grain, etc.

Deep fried food draws out the water molecule, making food crunchier.

Salt makes food tastier.
