They are generally identified by convention rather than any strict criteria, but seven areas are commonly reckoned as continents – they are (from largest in size to smallest): Asia, Africa, North America, South America, Antarctica, Europe, and Australia.

A continent, in geologic circles, is defined as a tectonic plate with a large land mass above the ocean's surface. There are seven such type plates. There are more plates, but those are completely submerged. The seven plates fitting this description are:
the North American plate
the South American plate
the Eurasian plate
the African plate
the Australian plate
the Antarctic plate
the Indian plate.
However, due to things like politics and international agreements, Europe and Asia are usually referred to as separate, and Indian plate is called a "sub-plate" or "sub-continent" and gets lumped in with Asia. Visist the USGS website, they have a map of the world's tectonic plates.
