I went to Egypt last spring. It is pretty safe, especially with a tour group, but be sensible. We had an awesome time, and the sights were amazing. Food was ok but blah. Under no circumstances should you drink the water or eat raw fruit or vegetables. Because, they are sold by weight, and the Egyptians inject them with the water to make them weigh more. I didn't get sick, because I even brushed my teeth with bottled water.
The one problem we encountered was theft. It is crucial that you do not bring valuables with you. Keep your camera and passport with you at all times. Keep a copy of your passport somewhere else.
Above all, keep all your luggage locked when you leave your room at the hotel or on the cruise boat. Put all your cosmetics and everything else in there.
It is an expected and accepted practice, even in the best hotels, for the housekeepers to steal from you. Every woman in our tour group had items stolen from us.
If you exchange money in the hotel "bank," write down how much you are giving the guy and show him what you wrote, and count it out to him--then when he counts it, count it again, in front of him. I hope that it will be the same as what you wrote and what he said he gave you as he counted it, but they are very good at sleight of hand and over counting, skimming off the top for themselves.
The only other negative issues we encountered were the constant hawking from vendors, who get right up in your face and try to give you stuff 'free," but eventually they find you again and demand payment for their "gift." Don't be afraid to be rude to them and tell them to leave you alone.
When on the cruise, it's very entertaining at Aswan, because these guys come up to the boat in their little boats and throw stuff up at you that they want you to buy. That's ok, but check with the boat gift shop who might sell you the same stuff but cheaper. Also near Aswan at the dam, little beggar kids will throw old film cannisters up on the deck and want you to put in money and throw them back. We just threw them back empty, for the most part. Or we just put in a couple of pennies.
And basically, remember, that in Egypt anytime someone does something for you, taking a picture, etc., they expect to be paid. No matter what you pay them, they will want more, too! That's a little tiring.
I think if you follow this advice you might have a good time. Have a good trip.

Sounds like a fantastic trip. U.S. State Dep't publishes info sheets on other countries which include info on safety concerns. see website below. there are certain parts of Egypt which should be avoided. You may want to address this subject with the tour company. Hope you have a great trip.
