I can't imagine a dog growing to more than double the size of the breed. That dog needs to get to a vet right away to find out why it's so big.
Now, as for your question, did your original rental agreement limit the size of the dog to 30 pounds, or is it the new company that has set this limit? If your original agreement didn't have the limit, you should be grandfathered. If you've been there a while with the dog, even if it was above the limit, you should also have a case that it was allowed by the previous company, and therefore should not be enforced now.

You don't mention where you live. In NY, if an animal has been there for a certain period of time, they cannot evict you. The new management company cannot change the rules on a lease that was already signed and accepted.
Check into the laws in your area, you may be able to stay put after all.

YOu can do nothing but move. You are in violation of your contract. Either move, or get rid of your dog, which would be a very difficult thing.

another option is to go blind and have your dog be a seeing eye dog
I bet they would have trouble evicting you over that......
honestly, I'm not sure you have any options but to move
