If you mean a true lily like Lilium candida the the Madonna Lily then white because these plants are only white. This is the lily that is mentioned in the oldest writings usually as the 'White Lily'. With the rise of Christianity it became associated with the Madonna. This lily has always been associated with strength & purity.
Many plants resemble true lilies including white Calla lilies that are also often used in funeral arrangements.
However other plants with similar common names like the daylily are used in other colors like purple and gold. Purple and gold symbolized life and death in full cycle. Gold for dawn, birth and hope. Purple for dusk, death and rest.
