I like Sharp Cheddar or Colby. And I only eat cheese if I have Welch's Grape Juice to drink with it.
The grape juice compliments the taste of the cheese and then for digestive reasons.

I love any type of brie or any type of blue cheese. The stinkier the better!!!
Boars Head makes a horseradish cheddar that is awesome on a roast beef sandwich.
