All GM motors operate from 195-220F. They come equipped with a thermostat that is designed to open at 195F so it attempts to keep the motor at that temp. at least. When it is hot outside the motor's temp will increase above that until the PCM turns the coolant fan(s) on. This temp is usually a little different depending on the model of car or truck. The boiling point of water is 212F, so with the glycol and the cooling system pressure making the actual boiling point higher than that, the motor is operated within this area as the coolant cannot be allowed to boil as it will spit out the coolant.
