We have 5 phones on our cell phone plan. I want to drop 2 of the users. Can this be done without extending our contract and having to pay the 175 disconnect fee? The contract expires in 02/08.

No, you will have to pay the cancellation fee. You could try to find someone who wants to take over those 2 lines. You could transfer the lines and there is no penalty.
