1. Susan Cooper's The Dark is Rising series. There are five books in this series, most which are about a young boy who turns out to be an Old One, destined to fight the dark. The Gray King was my favorite.
2. Terry Brooks. He has a few series out, including the Magic Kingdom series. There are five books in Magic Kingdom -- the first three are excellent, the last two only so-so. You may also like his Shannara series. The very first book (I think it was Sword of Shannara) is only OK -- I've heard it called Fellowship of the Ring with the serial numbers filed off, and that's pretty apt. But it greatly improves from there, especially the Scions trilogy.
3. R.A. Salvatore - He's written many Dungeons and Dragons style books. They are OK, in my opinion, but he has a huge following
4. Anne McCafferey's Pern series -- her earlier arch -- ending with All the Weyrs of Pern -- is excellent. The best were DragonFlight, DragonQuest and (my absolute favorite) The White Dragon. She did a parrelel series concerning Harpers - Dragonsong, Dragonsinger and Dragondrums - were very enjoyable. Also liked the first couple books in The Rowan series and the Crystal Singer series. Several of the Ship books are fun reads.
5. Kenneth Oppel -- His Silverwing trilogy was a lot of fun, concerning the adventures of a young bat. Also loved Airborn and Skybreaker, which take place in the air.
6. Orson Scott Card -- I love the Alvin Maker series, which is an alternate universe sort of story concerning America, in a universe where magic exists. Also liked his Ender series -- the first two books, that is. The parallel series to Ender -- the Shadow series, which centers on Ender's friend Bean -- is excellent.
7. Mary Stanton wrote two books, The Heavenly Horse of the Outermost West and Piper at the Gate which were both excellent. I wish she would have written more! If you like books such as Watership Down or the Silverwing trilogy, you'll like these. I know that Stanton also wrote a long series of Unicorn books, but I've never had a chance to read them.

I would recommend the Chronicles of Narnia definitely.
Also 'His Dark Materials' by Philip Pullman is a very good trilogy.
Robin Jarvis has some books which are kind of similar to the redwall series but an awful lot darker/scarier (they are a bit anxty but are very well written) The first one to read would be the Crystal Prison.
Terry Pratchett books as there are about 30 of them now (although he has a very distinct sense of humour so you might not like him as much)
the first book in the discworld series is The colour of Magic but I have always preferred the Guards set, the witches or Death so you can start on those if you prefer as they are all kind of stand alone books (but you get a better sense of the world and his writing if you start at the beginning!)
He has also written the Truckers series which was good but a bit younger reading. I still enjoyed them.
Finally I do like David Eddings, he has a couple of series out which are a good read, The Belgariad and The Malloreon and The Elenium and The Tamuli makes 16 books in total which should keep you going for a while!!
I've been recommended the Twighlight series but haven't read them yet!
I wanted to edit this to add Tad Williams. He's written a couple of FAB series and has the first & second book of another out now.
I loved the Memory, Sorrow, and Thorn trilogy which was called the war and peace of science fantasy! He also wrote another trilogy called Otherland which was like a blend of science fantasy and fiction. It was fab.
His new one is called shadowmarch and I can't wait to read next book!

You've gotten some great suggestions above--particularly 'Ender's Game' and 'His Dark Materials'. I really think you'd like those.
No one has mentioned George RR Martin's 'A Song of Ice and Fire', which is, hands down, the best fantasy series I've ever read. Currently, there are four books in the series; the first is 'A Game of Thrones.'
Other series I've enjoyed are Roger Zelazny's 'Amber' books and Raymond E Feist's 'Magician' series. I preferred Terry Pratchett's 'The Bromeliad' trilogy over most of his Discworld books (it's a little more young adult than I normally read, but as an adult I really appreciate the satire!).
These aren't series, but you might want to look into Neil Gaiman (judging by the books you've enjoyed, I would start with 'Stardust'), and Connie Willis. Also, you might like Emma Bull's 'War for the Oaks' or Marion Zimmer Bradley's 'Mists of Avalon' (there actually is a series of Avalon books, but this one can stand alone).
Of course, if you've not read 'Lord of the Rings,' I would start there. ;-)

I would recommend the Faerie War Chronicles, the Percy Jackson and the Olympians series, and the Artemis Fowl series. Oh, and just for the record, the third book to Eragon and Eldest comes out sometime next year, and it will probably be called Empire, but nobody knows if that's true or not. And, the cover will have a green dragon on it.

Have you read Ender's Game by Orson Scott Card? Great science fiction book (soon to be a movie, directed by Wolfgang Peterson). Ender's Game is the first part of a trilogy, the other parts being Speaker for the Dead and Xenocide.

A great horror/fantasy series is the Vampire Chronicles, by Anne Rice. There are 10 main books in the series, with two more labeled the "New Tales of the Vampires".
If you have ever seen the movies "Interview with a Vampire", or "The Queen of the Damned", they are based on her books by the same name.

The "Sweep" series by Cate Tiernan. There are 13 in the series, I think. They're about a high school girl named Morgan who discovers she's a blood witch and descended from great witches. It's a cool series.
