The effect is mostly from the calcium in the milk. Calcium is more chemically active than iron. Most molecules which could capture a ferrous or ferric ion could even more effectively capture a calcium ion. This is most likely the reason.

I know that early exposure to cows milk can cause kinda of like ulcers causing iron to don't be absorbed properly leading to anemia
