Personally, I like Final Fantasy VI the best. The story and the characters were the most in depth and real. I think there is a nostalgia for FF7 because it marked a new generation in gaming. It was a departure from the typical medieval fantasy RPG.

FF VI (3 in the US) is widely regarded as the best Final Fantasy. No FF since has matched the game in depth or story. Most of the FF's after that just had crazy-haired japanamation characters on weird and obscure quests. Almost anyone could identify with the human aspects of FF3. It played heavily on real-life decisions and situations.
Furthermore, FF3 had one of the most critically-acclaimed soundtracks. I DL'd the music just to listen in the background while I am chilling.
Go DL a SNES emulator and then the FF3 ROM. Have at it, you will agree.

I myself prefer FF7 and I'm anxiously awaiting a remake. FF12 was nice but couldn't compare to the dramatic story of FF7. The anime Advent Children was really great as well.

I don't think VII (7) or XII (12) are the best. FFX (10) is my favorite.
