Ultimately, it is because it is the first empire of that scope. They refer to Persia as the "cradle of civilization" for a reason.
*ALL* later civilizations owe many attributes to the Persian empire including how trade works, how centralized government works, etc. They were the first.

They were the power to beat back in the days of Alexander the great. As they are not part of 'our' historic legacy beside being a formidable enemy there isn't much popular demand for their history.
Lets just say that what the Roman empire was to Europe is what the Persian empire was to the middle east and Asia only 2000 years earlier. Also the empire was the biggest empire ever. So historic importance is massive.

The Persian Empire was in the region where Iran and Iraq are now. To understand what is happening there now, you have to have an understanding of their history

2) Many of the conflicts in today's society can be directly traced to Persian influences due to the extent of the empire (mid-east conflicts, Balkan conflicts, etc.)
3) Responsible for widespread scientific advances that pre-date the Greeks or Romans (first written alphabet, astronomy discoveries, warcraft innovations, etc.)
4) Hanging gardens of Babylon were one of the original 7 wonders of the world
5) Created many of the first sustained trade routes between East & West
