My best guess would be that your thermostat could be on the fritz. They are relatively cheap and easy to replace.

It sounds like the thermostat may be the problem. If you have an old mechanical one you should replace it with a digital unit. They are more accurate and can save you money. Get a programmable one and save 10-15% on your electric bill.

sounds like you need to clean the front coils, remove the filter, clean it, remove the front, use a soft brush spray a soft soap soulition in to the coils, gentley brush the coils up and down, [go with the lines] there is a little Bulb in front of the coils clean that also, this bulb controls the temp setting,
flush with plain water, turn unit on while flushing it, replace front then filter
