it is a front loading machine in my daughter's dorm, and you can't open it once the cycle starts to check the temp.

Usually you wash dark colors in cold water so I am guessing that is the cold water setting. I also wash bright colors in cold so that is a little confusing.

Probably the setting for dark colors. Dark colors won't (or shouldn't) bleed when washed in cold water.
If you really want to be sure, set the dial for "dark", turn the washer on and put your hand under the flow of water. If it stays cold, that's the cold setting. Do this for each subsequent setting.
