That is the rainy season so bring a warm coat. The elevation is only 2000 feet so it is not high desert. However at night it cools off a great deal. Expect 70s during the day, dropping into the 50s at night, with some nights down into the high 30s. The crowds should not be too bad except around the winter break and MLK day.

I personally would not do both Las Vegas and the Grand Canyon the same trip as the clothing needs and what you do are totally different. First class hotels vs camping out.

Consider going to LV and then doing day trips. Spring Mountain Ranch, Red Rock Canyon, Hoover Dam, Lake Mead, Mt. Charleston Ski Area, Valley of Fire all would make a nice one day trip and then you can go back to your hotel for the night.

I can't speak for Grand Canyon, never having been there (yet), but January is a great time to be in Las Vegas. Just avoid the Consumer Electronics Show week, which is January 7-10 next year. It's the biggest convention of the year, and the crowds and prices are horrendous.
The weather is usually good in January, it can get cold, but you'll avoid the legendary heat. Other than CES week, the crowds are thin, people are still recovering from Christmas. There's really no slow season in Las Vegas, but some times are busier than others.
My birthday is in January, so I've spent some time in Las Vegas for my birthday.

Grand Canyon in January is ideal especially if you plan to hike it . It can and does get snow on the Rim that will extend down about 1400- vertical feet .
The reason for hiking in winter is that there is always a 30 degree temperature difference between rim & river and if you leave the Rim[ 6800' ] at 35 degrees it will be 65 at the River[2400'] and about 60 on the Tonto Platform [3700' ] .That 60-70 degree temp is simply ideal GCN hiking weather. In addition snowmelt will supply water to creeks that would otherwise be dry from May to November so you won't have to pack as much water in.
Edit :
One of the really nice things about being in GCNP inJanuary is that the crowds are way down, the staff of the hotels that are open are less stressed and have more time for you , all the roads out to all the overlooks are open and the air smells like the Ponderosa Pine that is burning in the fireplaces of the lodges.
While the Canyon itself is normally beautiful when it has a mantle of snow on it ,it aquires this even more magical quality.

If you want to do the South Rim of the Grand Canyon then it is OK, but I would not call it ideal. It is possible to have snow and ice on the Rim, which can make it difficult or impossible to hike down, so that can limit your access.

If you are interested in the North Rim, it is closed in January, so it is certainly not ideal.

So your options are limited or potentially limited in the Grand Canyon in January - making it NOT and ideal time. I'd say "ideal" time for Grand Canyon is May and September.

Vegas, of course is fine any time - and January may indeed be ideal.

Las Vegas and the Grand Canyon are considered high desert, which means high elevation. Plan on it being coolish.

I went to the Grand Canyon in April a few years ago and it snowed.
