As you get into Wisconsin - you could try the "House on the Rock" and Frank Lloyd Wright's Taliesen estate. Closer to Green Bay - there's the EAA Flight Museum in Osh Kosh. You could divert to Milwaukee - quite a bit to see there (a couple of nice museums - Brewers are playing pretty well)
The Wisconsin Dells has some family fun places - lots's on indoor waterparks, etc.
What brings you to Green Bay - catching a Packer game?
Omaha probably has some sights to see. Unfortunately, doesn't appear to be much between Utah and Eastern Nebraska. You could divert to I90 and see Devils Tower in WY - but I'm not sure it would be worth the time.

I'm not going to map this out for but I have visited all these places
Go to Cheyenne and find your way to Scottsbluff NE . I had breakfast at the most popular breakfast place in Scottsbluff once and they pleasantly surprised me by using very high quality beef in the fajita omelett I ordered .
From there find your way north to Devils Tower WY and head east into Rapid City SD visit Mt Rushmore, Badlands NP
Then it's straight across SD & MN on I-90 E into WI
When I-90 meets I-94 go north 1 exit to SR 21 take that into Oshkosh and the US 41 into Green Bay

For excellent German food. Served home style. Stop at the Amana’s in Iowa.
You will not regret it. Just a few miles north of I-80 via highway 151. Which is just a few miles west of Iowa city.

Stop at Little America, Wyoming....great little tourist stop. Take a break at Laramie and visit the Wyoming campus. Great school. Stop at Scottsbluff, Nebraska and visit the Oregon Trail memorial. Stop at Kearney, Nebraska and tour the grass hut of the pioneers. Stop at Ottumwa, Iowa and visit Radar O'Riley's fantasy home. Stop at Burlington, Iowa and visit the Burlington Railroad museum.

That is over 20 hours driving time so you won't have much time for detours. I have driven most of it , and their are no spectacular sights, but the vastness of the farm country and the small towns are interesting to anyone use to cities. It is worth while to eat in small local restaurant instead of stops along the highway. People are mostly very friendly and will tell you what is happening in their area. Food is cheap, but mostly meat and potatoes kind of meals, and steak is the meal of choice.

Stop at Evanston, Wy. and buy lots of fireworks. Otherwise, don't waste your time stopping except for gas.
