...uf..this is a hard question because I love to travel...but I try to answer...
Budapest - Hungary
Salzburg - Austria
Venice - Italy
Sibiu and Brasov - Romania
Athens - Greece
...but the list could go on and on...Barcelona and Madrid (Spain), Rome, Milano (Italy), Prague (Czech Republic), La Valetta (Malta), Viena (Austria)...
...a great idea would be for you to go to Greece, visit the continental part of the country for 4-5 days (don't miss Athens, Thessaloniki, Meteora, Cape Sounion...) and then go to the greek islands wich are absolutely beautiful :Crete, Corfu, Santorini, Skyathos, Mykonos, Rhodos, Zakynthos,Tassos...
...wherever you decide to go I wish you to spend an unforgettable time...:)

For you it should be the countries you have always heard about, the ones that are most "Europe" to you.
I would not go to London or Paris if you have no more than 2 days there, I would rather go to a smaller town that I can see in those two days. But if Europe for you consists of London, Paris and maybe a bit more, you would not be satisfied if you had missed them.
Just a few which I found worth visiting, all small enough to see in 2 days, but most of them worth longer too.
Oslo, Copenhagen, Amsterdam, Antwerp, Rouen, Bratislava.
I stop here, but I could go on for a while.
